Why does this demijohn need a separate airlock, and which one fits?
During fermentation the contents release carbon dioxide that must escape while outside air and contaminants are kept out. The 25 L demijohn is supplied with a cap for sealed storage, but for active fermentation the manufacturer recommends a double-bubble water airlock with a O 50 mm rubber bung (sold separately), which seats in the 4 cm internal mouth.
What are the protective basket and handles for?
The basket shields the glass from knocks and helps insulate the contents, while the handles let you lift and move the vessel more safely - important because a full glass demijohn is heavy and fragile.
How should I clean and sanitise it before use?
Glass is non-porous, so it cleans well, but the narrow 4 cm mouth means you need a bottle brush or a soak to reach residue. Always sanitise before filling, because leftover yeast or bacteria can spoil the next ferment. Avoid abrasive tools that could scratch the glass.
Can I use it for storage as well as fermentation?
Yes. Use the recommended airlock while fermentation is producing gas, then swap to the complimentary cap for secure, sealed storage once fermentation has finished.
