The 20 cm Hana Kiritsuke knife is an extremely versatile fish knife, ideal for numerous tasks: from gutting to cutting and filleting, up to the precise portioning of fillets and preparations such as sashimi.
It is an elegant and functional Japanese kitchen knife, designed to offer great versatility in the preparation of Asian dishes. The kiritsuke design originates from the combination of the characteristics of two traditional blades: the nakiri, used for vegetables, and the sujihiki, designed for fish. Thanks to this fusion, it is possible to work with precision on a wide variety of ingredients using a single knife.
The blade of HANA knives features a 3-layer San-mai structure, with a central core made of MOVAX steel, an alloy composed of chromium, molybdenum, and vanadium that reaches a hardness of 58 HRC (Rockwell). This core is protected on both sides by high-quality stainless steel, which enhances strength and long-term durability.
The dark Pakka wood octagonal handle, designed by experienced designers, provides an ergonomic and well-balanced grip. This combination ensures precise control, stability during use, and a smooth, effortless cut, making it ideal for both professional chefs and cooking enthusiasts.
