    • Frequently asked questions about this product

At which stage of winemaking should Tan'Cor Grand Cru be added?

Tan'Cor Grand Cru is designed for use during red wine maturation. The optimal addition points are during the first racking after fermentation, immediately after malo-lactic fermentation completes, or at any stage during maturation. It should be added at least two weeks before bottling to allow full integration with the wine. It can be sprinkled directly onto the wine during pump-over or homogenisation.

What dosage should I use for my red wine?

For general ageing and structure improvement, use 5–30 g/hL. For active wine protection and colour stabilisation, use the higher range of 20–30 g/hL. Start with a lower dosage and perform bench trials on small samples before committing to a full-tank addition. The optimal dosage depends on the grape variety, vintage conditions, and your desired wine style. FERMETECH can help with dosage recommendations for your specific situation.

How does this tannin stabilise colour in red wines?

Tan'Cor Grand Cru contains proanthocyanidic tannins rich in catechin that combine with free anthocyanins in the wine to form stable colour complexes. These complexes are more resistant to colour loss from pH changes, sulfite bleaching, and oxidation than unbound anthocyanins alone. This results in deeper, more stable colour that persists throughout ageing and into the bottle.

Can this product be used for white or rosé wines?

Tan'Cor Grand Cru is specifically formulated for red wine maturation and is not recommended for white or rosé wines, as it would add unwanted colour and astringency. For white and rosé wines, FERMETECH offers other protective tannin products specifically designed for those applications. Contact us for recommendations suited to your wine type.

What is the shelf life and how should this product be stored?

The product has an optimal use period of 4 years from production date when stored correctly. Keep the sealed bag above ground level in a dry storage area at moderate temperature, away from direct sunlight and moisture. Once opened, reseal tightly and use within one season. The granulated form dissolves completely in water, making it easy to measure precise dosages even from a partially used bag.
