How it works:
Preliminary operations
Before using the press, remove any traces of dust from the internal parts with a brush and/or air jet. Use a damp cloth to clean the cage, crescents and pieces.
Filling the press
Remove all internal wood and ensure that the cage is closed using the pins provided. Raise the ratchet upwards along the threaded screw (turning it anticlockwise), fill the cage with the product to be pressed and position the half-moons. Place the pieces of wood on top, perpendicular to the direction of the half-moons.
Preparation for pressing
Lower the ratchet, turning it clockwise, until it rests on the pieces. Position the jumpers, making sure that the tips fit into the circular holes in the crown. Insert the lever or rod into the hole in the ratchet and secure with the butterfly screw.
Pressing
Stand in front of the lever and grasp it with both hands. Move the lever forwards and backwards to advance the jumpers and rotate the ratchet downwards, pressing the woods on the product. When the ratchet reaches the upper edges of the cage, refill with grapes. After the last pressing, return the winch to the top, remove all wood, extract the pomace and clean thoroughly.

This allows gradual pressure increase and is gentler on pomace compared to hydraulic systems. It requires more manual effort but provides excellent control for artisanal wine production.
What is the expected yield per pressing cycle?
With a 1000kg grape capacity and the 700mm diameter stainless steel cage, you can expect juice yields of 65-75% depending on grape variety, ripeness, and the number of pressing cycles performed. Multiple gentle pressing cycles with re-breaking between them maximise yield while maintaining quality.
Why does the press use wooden pieces and crescents?
The wooden pieces (blocks) and half-moon crescents are stacked on top of the pomace to distribute the pressing force evenly across the entire surface. They bridge the gap as the pomace compresses, ensuring uniform pressure and preventing the screw from tilting, which would reduce efficiency and risk equipment damage.
How should the epoxy-enamelled must basin be maintained?
Rinse the must basin with water immediately after each pressing to prevent dried grape residue from bonding to the enamel. Avoid using abrasive cleaners or metal scrapers that could chip the epoxy coating. Inspect annually for cracks or chips and contact FERMETECH for repair options if the bare metal becomes exposed.
Can this press be used for fruit other than grapes?
Yes, the lever press works well for pressing apples, pears, and other fruits for cider, perry, or juice production. The removable cage pins allow easy loading and unloading of pomace. For softer fruits, fewer pressing cycles at lower pressure are typically sufficient.
