Enzyme (250g) Lafazym Thiols [+]
Usage: Pectolytic enzyme preparation designed to reveal thiol aromas in white and rosé wines. Works in synergy with high thiol-producing yeast strains to enhance aromatic profiles.
Features: Natural, non-GMO, preservative-free. Compliant with EU 2019/934, Food Chemical Codex, and JECFA. Active at 5-60°C (41-140°F) and pH 2.9-4. Compatible with cold stabulation and clarified juices.
Technical data: Pectinase activity: >1000 PLU/g. Dosage: 3-6 g/hL (30-60 ppm). Packaging: 250g boxes. Shelf life: 4 years.
Warnings: Irreversibly inactivated by bentonite. Once diluted, use within 6-8 hours. Store in a cool, dry place away from odours.

What is Lafazym Thiols [+] used for?
Lafazym Thiols [+] is a pectolytic enzyme preparation specially designed to bring out varietal thiol aromas (such as passion fruit, grapefruit and boxwood notes) in white and rosé wine. It works best with thiol-releasing yeast strains during fermentation.
What is the recommended dose?
The recommended dose is 3-6 g/hL (30-60 ppm), depending on the grape variety, the turbidity of the wort and the desired aromatic intensity. For a more aromatic extraction, use larger doses.
Can it be used with bentonite?
No. Bentonite irreversibly inactivates Lafazym Thiols [+]. Add the enzyme first and wait for it to finish working before adding the bentonite to ensure effectiveness.
What are the storage conditions?
Store in a cool, dry place, away from odors, in the original sealed package. Shelf life is 4 years if stored correctly. When dissolved in water, the solution must be used within 6-8 hours.
