Frequently asked questions about this product
What do the different enzyme activities do?
Pectinase and arabinase break down pectin to improve juice extraction and clarity, while beta-glucosidase helps release natural aroma compounds from fruits and berries.
Why should the enzyme be stored in a refrigerator?
Cool storage preserves the enzyme's activity; heat gradually degrades it and reduces its effectiveness over time.
What is the recommended dosage and processing time?
About 4-8 grams per 10 kilograms of crushed fruit or berry mass, with an optimal processing time of around 12 hours at +20°C.
How does temperature affect how the enzyme works?
Enzyme activity slows as the temperature drops, so at cooler temperatures allow more time to achieve the same effect.
