Working Principle:
Water in the siphon system creates an airtight barrier. Carbon dioxide produced during fermentation exits in a controlled manner through the airlock, maintaining optimal pressure in the container.

What liquid to use in the fermentation tube?
The most common is boiled and cooled water. For extra safety, a 10% sulphite solution or a diluted vodka solution can be used, which prevents the growth of microbes in the fermentation tube itself. Just avoid tap water for longer fermentations.
How often to check the water level?
Check weekly during active fermentation, every 2-3 weeks during secondary fermentation. Over time, evaporation occurs and the dried fermentation tube no longer provides an airtight barrier, causing the drink to oxidize or become contaminated.
Does the Ø75 mm cap fit standard cylinders?
Yes, the Ø75mm rubber stopper fits most standard glass cylinders with a 75mm neck opening. The 9mm center hole accommodates the stem of the fermentation tube. For non-standard containers, check the neck diameter before purchasing.
How to clean the fermentation tube between uses?
Take the tube into parts, rinse with warm water, then soak for 5-10 minutes in a 10% sulfite solution or a food-safe disinfectant. Rinse again and let air dry. Avoid abrasive brushes that can scratch the plastic.
Why is the fermentation tube no longer bubbling?
Bubbling slows down or stops when active fermentation stops — this is normal. However, check for cap seal leaks, evaporated water in chambers, or stalled fermentation due to low temperatures or yeast problems. Measure the specific gravity to confirm the state of fermentation.
