How should I load the trays for even drying?
Spread food in a single layer across the stainless steel trays so air can circulate around each piece, and avoid overlapping. Even loading and similar piece sizes give uniform results, and rotating trays during long cycles helps if you notice uneven drying.
As this is a rental unit, what should I do before returning it?
Clean the trays and chamber thoroughly once the unit has cooled, removing all food residue and moisture, since trapped residue can affect later batches and hygiene. Check that all trays are accounted for and the chamber is dry before return.
