Complex fining agent works through the interaction of different components. Ellagitannin and egg albumin bind unwanted compounds, bentonite ensures protein stabilization, and activated carbon removes color defects and unwanted odors.

How do the different ingredients work together?
It combines ellagitannin, gelatin and egg albumin - proteins that bind tannins and haze particles - with bentonite for protein stabilization and activated carbon to reduce unwanted odors, giving a complete fining action in a single product.
Why should it be dissolved in hot water and added immediately?
Dissolving it in about 10% hot water with constant stirring disperses and activates the agent; adding it to the wine immediately prevents the gelatin from setting and losing effectiveness before it can act.
How long should the wine settle before racking?
After careful pumping-over, leave the wine to settle and decant after 4-5 days, once the sediment has compacted at the bottom.
Does this product contain allergens that must be declared?
Yes. It contains egg albumin, an allergen that must be taken into account for labelling of the finished wine.
