Description
Sanavin - Professional Wine Acidity Regulator
Sanavin is a high-quality wine acidity regulator specifically designed for premium wine production. This advanced solution balances wine acidity while preserving all essential organoleptic properties and the authentic character of the wine.
Composition and Properties
The product consists of 90% potassium hydrogen carbonate and 10% neutral potassium tartrate. It is a white, odorless powder that dissolves quickly and evenly in wine. Due to its hygroscopic nature, it absorbs moisture from the air.
Main Benefits in Wine Production
- Effectively reduces excess acidity
- Preserves authentic wine taste
- Does not create off-flavors
- Maintains original wine color
- Enhances natural wine aromas
Dosage and Usage
The optimal amount is 150-200 grams per 100 liters of wine. 110 grams of Sanavin reduces tartaric acid content by 1 g/l.
Usage Instructions:
- Conduct test trials to find suitable dosage
- Add powder to wine slowly while stirring
- Initial foaming subsides naturally
- Do not use with fresh grapes, grape must, or still fermenting wines
Storage and Compliance
Store in airtight packaging in a cool, dry environment. Product complies with European Union regulation CE 822/87.
Working Principle
Sanavin forms neutral compounds when reacting with tartaric acid, reducing the overall acidity of wine. This makes the wine taste more harmonized and enjoyable.

Frequently Asked Questions
How much Sanavin should I use per 100 liters of wine?
The optimal dose is 150-200 grams per 100 liters of wine. As an exact reference point, 110 grams of Sanavin reduces the tartaric acid content by exactly 1 g/l. We always recommend first doing a small test on a sample of wine to determine the right dosage for your wine.
Can Sanavin be used on fresh must or fermenting wine?
No. Sanavin must not be used on fresh grapes, grape must or wine that is still in active fermentation. It is intended for aged or stabilized wine. Using it too early can disrupt fermentation and cause unwanted reactions with other wine components.
What does Sanavin consist of?
Sanavin consists of 90% potassium bicarbonate and 10% neutral potassium tartrate. It is a white, odorless, hygroscopic powder that dissolves quickly and evenly in wine, without changing its color or causing off-flavors.
How to store Sanavin?
Store Sanavin in its original airtight container in a cool, dry environment. Since the powder is hygroscopic and absorbs moisture from the air, moisture reduces its effectiveness and causes clumping.
Does Sanavin comply with EU regulations?
Yes, Sanavin fully complies with the European Union regulation CE 822/87, which regulates oenological products used in wine production. This ensures safety and suitability for professional wine production in the EU.
