At which stages of winemaking can this enzyme be added?
It can be used across several stages — on the berry mash, during must preparation, during malolactic fermentation and through wine maturation — and because it is sugar-tolerant it can even be added before alcoholic fermentation begins.
How does it actually enhance the wine's aroma?
Its β-glucosidase activity releases aromatic compounds and terpenes that are otherwise bound within the grapes, freeing them so they contribute to the finished wine's bouquet.
