Usage Principle

Does a new oak barrel need preparation before the first use?
Yes. A new barrel must be swelled with water before you fill it: add cold water and let it stand until any weeping through the staves stops and the joints close up. This conditioning is a normal, essential step that seals the 56-litre barrel and prevents leaks.
What does the medium toast level do to the drink?
The inside is toasted to a medium level, which releases oak tannins and vanillin in a balanced way. It adds structure plus vanilla and gentle spice notes, without the heavy charred character of a darker toast.
How long should I age in it, and does the size matter?
Smaller barrels have more wood contact per litre, so they impart oak character faster than large ones. Taste regularly rather than following a fixed time; the 56-litre size lets you match the ageing to your batch.
How do I look after the barrel when it is empty?
Never let a used barrel dry out, or the staves shrink and it will leak. Keep it filled, or clean it and store it with a keeping solution following normal barrel care, in a cool, humid place away from direct heat.
