New Barrel Preparation

  • Fill barrel with tartaric acid solution (10g/L)
  • Keep solution in barrel for 4-5 days
  • Empty thoroughly

Used Barrel Maintenance

  • Rinse thoroughly

Storage

  • Keep in humid environment (70% humidity)

How do I prepare a new barrel before its first fill?

Fill it with a tartaric acid solution (about 10 g per litre) and leave it for 4-5 days so the staves swell and seal, then empty it thoroughly and disinfect with a sulfur strip before filling with wine. This swelling step is what stops a new barrel from weeping.

How should a used barrel be cleaned and maintained?

Clean with an anhydrous soda solution (about 1 kg per 10 litres of hot water), rinse thoroughly, then soak in tartaric acid solution for 2-3 days and disinfect with a sulfur strip (about a quarter strip per 100 litres). This routine removes deposits and keeps the wood sound between fills.

How do I store the barrel when it is empty?

Keep it in a humid environment (around 70% humidity) at 12-17 degrees C, and disinfect with a sulfur strip roughly every 3 months. Humidity stops the staves drying and shrinking, which would cause leaks when you refill.
