What is the airlock for during fermentation?
The airlock lets the carbon dioxide produced by fermentation escape while blocking outside air and contaminants from getting in. This one-way action protects the wine or beer from oxidation and spoilage organisms during the active fermentation.
Why should I not fill the barrel all the way to 30 litres?
Fermentation generates foam and a rising krausen plus large volumes of CO2, so the contents expand. Leaving several litres of headspace stops the foam from clogging or blowing out the airlock and prevents messy overflow.
How do I use the bottom tap correctly?
The bottom valve lets you rack or bottle the finished beverage without disturbing the sediment (lees) settled at the bottom. Draw off the clear liquid above the sediment for a cleaner result, leaving the dregs behind.
How should the barrel be cleaned and sanitised?
Wash it with a non-abrasive cleaner, since scratches in the plastic harbour bacteria that are hard to remove. Then sanitise it before every batch, as the most common cause of a spoiled ferment is contamination from an inadequately cleaned vessel.
