What is the maximum batch size with this kit?
The set is designed for batches up to 50L. Both the brewing pot and the TROLL fermentation vessel have a volume of 50L, allowing to brew and ferment the full volume in one batch.
Is stainless steel food safe?
Yes, all stainless steel components are made of AISI 304, a food grade alloy suitable for acidic drinks like Kombucha. It is corrosion resistant and does not affect the taste of the drink.
Why does the lid of the fermenter need to be breathable?
Kombucha fermentation is aerobic and requires oxygen exchange while keeping insects and dust out. The breathable lid of the TROLL fermenter allows air movement for the SCOBY while protecting the beverage.
What is potassium metabisulfite used for?
