Instructions for use
The IDP process allows direct addition of TANFRESH® to must or wine in the tank during a pump over for homogenisation.
It is recommended to add TANFRESH® at least two weeks before bottling.
For white and rosé wines stabilised with CMC (tartaric stabilisation), the addition of tannins towards the end of ageing may affect the colloidal stability; it is recommended to perform a protein stability test again systematically after addition.
Storage recommendation
- Store above ground level in a dry area not liable to impart odours. Ensuring stock is kept at a moderate temperature, in its original, unopened packaging.
- Optimal date of use: 4 years.

Frequently asked questions about this product
How does Tanfresh revitalise tired white and rosé wines?
Tanfresh contains a blend of proanthocyanidic tannins and oak ellagic tannins that work together to restore freshness. The proanthocyanidic tannins provide antioxidant protection and revive aromatic brightness, while the ellagic tannins from oak add structure and volume to the mouthfeel — giving the wine renewed vitality without masking its original character.
Can Tanfresh be used as an alternative to oak barrel ageing for white wines?
Tanfresh is not a direct replacement for barrel ageing, but it provides some of the structural benefits that oak contact delivers — particularly volume in the mid-palate and improved texture. It is a practical option for winemakers who want to add complexity and body to wines aged in stainless steel tanks without the cost and time of barrel programmes.
Does Tanfresh help with clarification and protein stability?
Yes. Tannins have a natural affinity for proteins, and Tanfresh improves clarification efficiency by reacting with unstable proteins in the wine. When used before or alongside bentonite fining, it can reduce the total amount of bentonite required and help achieve better clarity with fewer treatments.
At what stage of production should Tanfresh be added?
Tanfresh can be added during various stages — during fermentation for antioxidant protection, during ageing to refresh tired wines, or before bottling as a final corrective treatment. The optimal timing depends on your specific goals, whether that is structure enhancement, oxidation protection, or aromatic refreshment.
Can FERMETECH help determine the right tannin product for my wine style?
Yes. FERMETECH carries several tannin products suited to different applications — from oxidation protection to mouthfeel enhancement. Our team can advise on whether Tanfresh, gallic tannin, or another product best fits your wine's needs, grape variety, and production method.
