Usage: Clarification agent based on vegetable proteins for white and rosé wine production. Reduces enzymatic oxidation, complements bentonite, regulates SO² use, and improves clarification.
Features: Highly purified gallic tannin extract. Granulated form, light to dark amber color, completely water-soluble. Total phenolics >95%, humidity <10%.
Technical data: Dosage: 5-20 g/hL for oxidation protection, 2-4 g/hL for sparkling wines. Can be sprinkled directly onto wine during homogenization. Storage: 4 years in original packaging.
Warnings: Store above ground level in dry area. Qualified for direct human consumption according to EU regulation n° 2019/934.
Frequently asked questions about this product
How does gallic tannin protect white wines from oxidation?
Gallic tannin acts as a powerful oxygen scavenger — it reacts with dissolved oxygen before the oxygen can attack delicate aroma compounds and cause browning. This is especially valuable in white and rosé wines that lack the natural phenolic protection found in red wines. By consuming oxygen early, it preserves freshness and extends the wine's shelf life.
Can galalcool be used together with bentonite fining?
Yes, and this is one of its key advantages. Gallic tannin and bentonite work complementarily — the tannin binds to proteins while bentonite removes excess tannin-protein complexes. Using both together can reduce the total amount of bentonite needed and improve overall clarification efficiency, resulting in less lees volume and better wine recovery.
Is galalcool suitable for sparkling wine production?
Yes. At a lower dosage range of 2-4 g/hL, galalcool is well suited for sparkling wine base wines. It helps protect against oxidation during the extended production process and contributes to better clarity in the finished wine, which is important for sparkling wine quality.
How should galalcool be added to the wine?
The granulated form dissolves completely in water, but it can also be sprinkled directly onto the wine surface during pump-over or homogenisation. This ease of use makes it practical for both small-batch artisanal production and larger commercial operations. No pre-dissolution step is strictly required.
Does FERMETECH provide guidance on combining tannin products with other fining agents?
Yes. FERMETECH offers technical support for designing complete fining protocols. Our team can advise on the optimal sequence and dosage of tannin, bentonite, and other clarification agents based on your specific wine, grape variety, and production goals.
