Usage: Preparation derived from proanthocyanidic tannins rich in catechin, grape tannins and ellagic tannins from oak, for use during red wine maturation.
Features: Enhances wine structure and palate length. Stabilises colour by combining with free anthocyanins. Regulates oxidation-reduction phenomena. Prepares wine for barrel maturation. Improves clarification.
Technical data: Total phenolics: >65%. Humidity: <10%. Ash: <4%. Aspect: granulated, dark brown. Solubility in water: complete.
Usage protocol: Dosage: 5-30 g/hL for ageing and structure improvement, 20-30 g/hL for wine protection and colour stabilising. Apply during first wine racking, after malo-lactic fermentation or at any stage of maturation. Can be sprinkled directly onto wine during homogenisation or pump-over. Add at least two weeks before bottling.
Storage: Store above ground level in a dry area at moderate temperature. Optimal use: 4 years. Packaging: 1kg bag.
