Usage: Chitosan and enzyme based preparation for the control of Brettanomyces spoilage in wine production.
Features: Natural polysaccharide (chitosan) combined with pectinase/glucanase enzymatic preparation. Facilitates lysis and elimination of Brettanomyces yeasts. Thin powder, clear beige color.
Technical data: Acetylation degree: 0-30 mol%. Humidity: <10%. Recommended dosage: 10 g/hL (100 ppm). Maximum legal dosage (EU): 25 g/hL (250 ppm). Treatment after completion of AF and MLF. Maintain wine temperature above 10°C during treatment. Packaging: 250g boxes.
Warnings: Store in dry area at moderate temperature. Use within 3 years. Adjust wine SO₂ according to good oenological practices.
