Fermenter 50L Kombucha Troll wide stainless steel
Usage: Ideal fermenter for Kombucha production. Thanks to its size and shape, surface area/height ratio, this fermenter allows greater oxygenation, favouring the correct formation of the Scoby with relative low alcohol content of the final product.
Features: Built in AISI 304 stainless steel with flower embossed exterior. Rounded and welded bottom for easy cleaning. Includes thick stainless steel lid with cotton, 4 stainless steel hooks for lid sealing, welded stainless steel bushing, and ½" stainless steel tap.
Technical data: Capacity: 50L. Material: AISI 304 stainless steel 18/10. Diameter: 455mm. Height: 370mm. Wall thickness: 0.6mm. Bottom thickness: 0.6mm.
I screw the tap all the way in, but it doesn't stay straight. How can I fix it?
It is not necessary to screw it all the way in. Just tighten it until the tap is straight before reaching the end of the thread.
Frequently asked questions about this product
Why is the wide shape important for Kombucha production?
The wide, shallow design creates an optimal surface-area-to-height ratio for Kombucha fermentation. This maximises oxygen exposure at the liquid surface, which is essential for healthy SCOBY formation. The greater oxygenation also helps keep the alcohol content of the finished Kombucha naturally low, which is important for non-alcoholic beverage classification.
Can I use this fermenter for other beverages besides Kombucha?
Absolutely. While optimised for Kombucha due to its wide shape, this fermenter works well for open-top fermentation of other beverages including fruit wines, ciders, and vinegar. The AISI 304 stainless steel is food-safe and flavour-neutral. For closed fermentation (beer, wine), consider our models with airlock fittings for anaerobic conditions.
How do I properly seal the lid during fermentation?
The included thick stainless steel lid is secured with 4 stainless steel hooks for firm sealing. For Kombucha, the cotton cloth insert allows air exchange while keeping contaminants out — this breathable barrier is essential for SCOBY health. Do not use a fully airtight seal for Kombucha, as the culture requires oxygen to thrive.
What is the correct way to install the ½" tap without leaking?
Thread the tap into the welded bushing using teflon tape on the threads. It is not necessary to screw the tap all the way in. Tighten just until the tap handle points in the desired direction before reaching the end of the thread. Over-tightening can damage the threads and cause leaks. If properly sealed with teflon, the connection will be drip-free.
How should I clean and sanitise this fermenter between batches?
The rounded, welded bottom makes cleaning straightforward — no corners for residue to accumulate. Rinse with warm water after each batch, then clean with a food-safe, fragrance-free detergent. Avoid chlorine-based sanitisers, as they can damage stainless steel. A star-san or phosphoric acid-based sanitiser is ideal. Never use abrasive pads on the flower-embossed exterior to preserve its appearance.
