How should I clean and maintain the stainless steel tank between batches?

Rinse it with warm water after every use and periodically clean with a food-safe cleaner. Avoid abrasive pads, chlorine bleach and salty residues, which can damage the protective surface of stainless steel. Disassemble and clean the outlet valve too, as residue tends to collect there.

Why might the actual capacity differ slightly from the stated 60 litres?

Because of the manufacturing process the real volume can vary by up to roughly 10%. It is good practice not to fill the tank to the very top, but to leave some headspace for the liquid.

Can the tank be used for active fermentation or only for storage?

It is built as a storage and settling tank with a sealing lid. If you ferment in it, never close it fully airtight, because escaping gas needs a way out, and leave extra headspace for foam.

What can I connect to the 1/2 inch outlet valve?

The 1/2 inch valve accepts standard 1/2 inch fittings and hoses for racking or bottling. Use food-grade hose and a fitting that matches the thread so the connection stays leak-free.
