Usage: OENOLEES® is used in wine to reduce aggressive bitter and astringent sensations and increase roundness and savouriness. Suitable for use during alcoholic fermentation and maturation of red, white, and rosé wines, as well as post-ageing correction with a minimum contact time of two weeks.
Properties: Specific preparation of yeast lees, rich in peptides, formulated for selective removal of polyphenols. Provides refinement effect, enhances round mouthfeel, and improves the organoleptic profile.
Technical Data: Patented process (n°0452803), on yeast cell wall basis, high peptide content (low perception threshold 16 mg/L), complies with EC regulation n°606/2009. Packaging: 1 kg.
