Maintenance and Usage Instructions:

Preparing a New Barrel:

  1. Fill the barrel with solution (10g tartaric acid/1L water)
  2. Soak for 4-5 days
  3. Empty thoroughly
  4. Disinfect with sulfur strip
  5. Fill with wine

Preparing a Used Barrel:

  1. Clean with soda solution (1kg soda/10L hot water)
  2. Rinse thoroughly
  3. Soak in tartaric acid solution for 2-3 days
  4. Disinfect with sulfur strip

Storing Empty Barrel:

  • Rinse immediately with clean water
  • Let drain for 24h
  • Disinfect with sulfur strip
  • Seal tightly with bung
  • Store in humid (70%) and cool conditions (12-17°C)
  • Repeat sulfuring every 3 months

How should I prepare a new barrel before filling it with wine?

Fill the barrel with a tartaric acid solution (about 10 g of tartaric acid per litre of water) and let it soak for four to five days, then empty it thoroughly and disinfect it with a sulfur strip before adding wine. This swells the staves and seals the barrel.

Which toast level is recommended for red and white wines?

The barrel has a medium+ toast for optimal flavour transfer. A medium toast is recommended for red wines, while a heavier toast is recommended for white wines.

How do I prepare a barrel that has been used before?
