Preparing a New Barrel:
- Fill the barrel with solution (10g tartaric acid/1L water)
- Soak for 4-5 days
- Empty thoroughly
- Disinfect with sulfur strip
- Fill with wine
Preparing a Used Barrel:
- Clean with soda solution (1kg soda/10L hot water)
- Rinse thoroughly
- Soak in tartaric acid solution for 2-3 days
- Disinfect with sulfur strip
Storing Empty Barrel:
- Rinse immediately with clean water
- Let drain for 24h
- Disinfect with sulfur strip
- Seal tightly with bung
- Store in humid (70%) and cool conditions (12-17°C)
- Repeat sulfuring every 3 months
