What type of wine is this chip best suited to?
The High Mocha profile pairs particularly well with full-bodied red wines such as Cabernet Sauvignon, Merlot and Syrah, where mocha and toasty notes complement the dark berry character. It can also add complexity to strong white wines such as oak-aged Chardonnay.
How much should be dosed per 10 liters of wine?
The recommended dose is 5-30 grams per 10 liters of wine. We recommend starting with a smaller dose (about 10 g/10 L) and tasting regularly. Chips can always be added, but excess oak character is difficult to remove.
How long should the chips be in contact with the wine?
The minimum contact period is 14 days, the maximum is 6 months. Most winemakers taste once a week from the third week on and remove the chips when the desired mocha, vanilla and toast intensity is achieved.
Can the oak chips be recycled for another batch?
Oak chips are intended for single use. After the first contact, most of the extractable aroma compounds have been released, so a second use would only contribute minimally to the flavor. To ensure consistent quality, we recommend fresh chips for each batch.
How much wine can be processed with a 250 g package?
A 250 g package processes approximately 80-500 liters of wine depending on the selected dose (5-30 g per 10 L). At the usual average dose of 15 g/10 L, one package is enough for about 165 liters.
