What is the purpose of the conical bottom on this tank?

The conical bottom lets sediment and lees settle at the lowest point, so clarified juice or wine can be drawn off above the deposit and the sediment flushed from the bottom valve, improving clarity without extra transfers.

Why would I add the optional floating lid and fermentation kit?

A floating lid rests directly on the liquid surface and seals it from air, reducing oxidation and headspace when the tank is not completely full; with the kit's airlock and seal the same tank can also be used for active fermentation.

What should I consider about installation height and floor loading?

Plan for the full height plus the stainless legs, and note that the optional crane adds further height. Allow clearance above for filling, lid handling and the airlock, and make sure the floor can carry the loaded weight.

How do valves at different heights help during racking?

Valves at bottom and mid-levels let you draw clear liquid from a higher outlet while leaving lees behind, then flush the deposit from the lowest valve, which is central to racking wine and juice off their sediment.
