What is the conical bottom for?
The 8-degree conical bottom helps sediment and lees gather at the lowest point, where they can be drawn off through the bottom valve, leaving clearer liquid above.
What do the two cooling-jacket connections enable?
They let you circulate coolant through the jacket to control fermentation or storage temperature. The two half-inch connections serve as the inlet and outlet for the cooling medium.
Which valves are provided and what is each for?
The bottom one-inch valve drains the tank and removes lees, the side flow valve lets you rack the clear wine off above the sediment, and the DN15 sampling valve is for drawing tasting or test samples.
How is it accessed for cleaning and monitoring?
A bottom oval door and a top round door give access for cleaning, while the analog thermometer and the level sensor let you monitor temperature and fill level without opening the tank.
