What does PVPP remove that other fining agents may not?
PVPP (polyvinylpolypyrrolidone) specifically binds and removes excess polyphenols and tannins. This improves color and clarity, increases stability and helps prevent or correct oxidation, which protein finings do not target in the same way.
How does the dose vary by purpose?
Use about 20-40 g/hl for grape must, 5-15 g/hl for wines, and 20-30 g/hl for oxidized wines. The maximum permitted under EU Regulation 2019/934 is 80 g/hl, so dosing must stay below that limit.
How is it prepared and applied?
Prepare a solution at a 1:5 ratio of PVPP to water, run a test treatment with a small quantity, then add the solution to the wine and pump if necessary to distribute it evenly.
Why treat oxidized wine at a higher dose?
Oxidized wines carry more of the polyphenols PVPP targets, so a higher dose (20-30 g/hl) is used to bind them; a small test first confirms the dose needed without overstripping the wine.
