Usage: Lafase HE GRAND CRU is a specialized enzymatic preparation for red wine production. It increases colour stability, polyphenols, aroma extraction and yield, helping produce higher quality wines with more body and better palate perception.
Features: This unique enzymatic preparation facilitates extraction and improves colour stability by up to 20%. It increases extraction of soft tannins by 15% without increasing astringency. The preparation favours extraction of soft tannins from the skin and polysaccharides from the pulp, resulting in wine with better sensory profile. It increases fruitiness by releasing aromatic and flavour precursors from grape skins.
Technical data: Packaging: 100 g. Dosage for maceration and extraction: 3-4 g/100 kg. Increases quantity of free-run juice by 5-10% and reduces maceration time by 30%.
