Usage: Non-Saccharomyces yeast (Lachancea thermotolerans) for BIOacidification and fermentation of wines. Selected Active Dry Yeast (ADY), non-GMO, for oenological use.
Features: Strong capacity for acidification by converting fermentable sugars into L-lactic acid. Allows partial alcoholic fermentation, increases total acidity, reduces pH, produces fresh and fruity wines while respecting grape variety characteristics. Stabilizes colour and increases aging capacity.
Technical data: Viable SADY cells: ≥ 2.10¹⁰ CFU/g. Humidity: <8%. Recommended dose: 20g/hL (200ppm). Rehydration: 37°C for 20 minutes. Storage: 2-10°C.
Warnings: Sensitive to SO₂ (initial addition <4g/hL). Minimum pH >3.3. Must be used with S. cerevisiae strain. Activity stimulated at temperatures >20°C. Expiration date: 29/11/2025.
