Usage:
Selected yeast for white wine fermentation, ideal for varietal-specific wines such as Chardonnay, Viognier, Grillo, Catarratto, and Inzolia, providing a clean aromatic profile. Suitable for elegant and soft wines intended for barrique ageing.
Properties:
This strain, selected in Burgundy, has high alcohol tolerance (up to 15.5%), a wide fermentation temperature range (14-20°C), and low nitrogen requirements. It reduces volatile acidity, H₂S, and vinyl-phenols, enhancing aroma and palate roundness.
Technical data:
Average dosage: 20-30 g/hL. Typical analysis includes moisture <8%, high live cell count (≥2x1010 CFU/g), minimal lactic and acetic bacteria, coliforms, moulds, heavy metals and pathogenic bacteria absent or minimal. Supplied in a 500 g bag.
Warnings:
Store dry at 4–8°C in original packaging. Rehydrate as per pack protocol. Use immediately after preparation. Do not use if package is not intact. BEST USE-BY: 18 months. ALLERGENS: NONE DECLARED.
